Health and movespeed are the 2 main ones, weight is ok to a point (enough to carry a gear kit or 2) but eventually dinos will be your weight carriers.
The rest imo are situational depending on your playstyle, you'll figure out what stats work for you after a few dozen hours.
I much favour damage avoidance rather than tanking hits, so I leave HP where it is and go for a lot of stamina so I can keep running for a while. If something is chasing you and you run past a smaller herbivore, the predator will likely turn and go for that instead.
My priorities when building my character are carry weight, stamina, and fortitude. The latter will reduce your food and water drain, give you better resistance against temperature extremes, and make you harder to knock out from tranq attacks. I also like to level a good amount of oxygen, so I can stay underwater for a while even without scuba gear. Movement speed I find is a tricky balance - some of it can be handy to outrun threats, but too much can make it awkward moving around your base...for me the sweet spot is around 127%.
Should also be said that I play exclusively PvE though. PvP would add another large swathe of factors into the mix for consideration.
If you have 16GBs RAM, a decent CPU (8th gen I5 or better) then it will run ok at medium-high settings on a 1080p monitor imo.
Other then that, carry weight is the most important to me. I carry a lot of taming junk... tranquilizers, narcotic arrows, kibbles, narcotics, traps, net projectiles, and stone gates and gateways for making taming pens. That adds up to a ton.
If we're speaking of player's character stats, that's going to depend on variables we cannot account for regarding your playstyle/serveror single player/interests/ etc etc.
Keep in mind if you are playing in single player or on unofficial servers that increase the values for stats and or use modded content, prorities for such too can change or become moot.
All in all, as long as you understand the functions of the different stats (not just for players either mind you) then the choices are yours.
I only play PvE, I don't bother with speed in PvE since you'll be riding dinos most of the time and you can level dino speed, I increase some health, but again you'll be fighting while riding on dinos most of the time and you can increase their health a lot more.
I add a fair bit of weight, because half of the point of the game is crafting and you'll need to be able move around while laying a bunch of walls and foundations down, etc.. and I find it awkward to build while mounted on a dino. You also need to carry supplies like ammo, tools, armor, etc.. though your dinos can carry a lot too.
Some players like myself like splashing around in the water and too lazy to constantly craft scuba tanks, so I often put a lot of points into oxygen so I can stay underwater for a long time.
