It's totally possible to survive and even complete the game without getting the other engrams, but some of them may make some aspects easier.
The map in Gen1 is a lot more interesting, with more varied biomes and secret, hidden places to explore, so if you want exploration that may be your best bet. But Gen2's map is much larger and has a lot of building spaces, so if you're looking to build big bases that may suit better.
Gameplay-wise they're both quite similar, in that you have missions you need to complete in order to unlock the boss. But Gen2 is somewhat easier than 1 in that you start out with a tek suit and the drops are much more varied, so Gen1 may be more challenging if you want some difficulty.
Gen2 has more variety of creatures to tame though - almost every creature from Ark's history is on there somewhere, including the Gen1 creatures. So if you want to tame a lot, Gen2.
Genesis 2 is the easiest of all the maps for new toons (I first played all the maps with a new toon, except Aberration (which I didn't try until I could take a Tek Transmitter because otherwise, its hard to transfer to another server), then later overwrote them with my main toon).
Genesis 1 is by far the hardest for a new toon although not as hard as Aberration to transfer to another server. I'm playing unofficial in which the ability to transfer to another server depends upon the maps belonging to the same cluster.
The engrams you learn on a map are usually the ones relevant for that map, such as generally you can't learn a saddle for a dino that doesn't spawn on that map. Some of the Tek gear you can't learn or even wear if you have not killed some bosses on other maps.
However, Genesis2 gives you a complete Tek suit for free, requires no element to use (element in other maps is hard to obtain) and if you die, you respawn wearing it.
Hint if you choose Genesis2: Tame a moschops as one of your first tames. They are easy to tame (they aren't aggro, and if you get near them, they tell you want they want, which is random, and if you happen to have what they want, put it in your 0 slot, then give it to them. They are plentiful in the easy starting zones, don't require a saddle, and can harvest some amazing things (like I've moved on from the easy area to a harder spot, and they are harvesting some usually hard things to get from plants (like black pearls) or things that are tedious to collect, like chitin.
However yes, for situations other than the boss, it is a very powerful tool and makes the map a lot easier than most. The free suit has much less armour than the one you craft with tekgrams (around a similar armour stat to hide gear), but it is still very effective in dealing with small enemies without the need of a weapon, and escaping from larger threats by flying away out of reach.
It makes sense in terms of the story, and if you're starting a new character then you won't have other high level engrams too like metal building parts or high damage weaponry. But definitely Genesis 2 is quite a lot easier than other maps in the series for survival, excluding the boss fight.
One could argue that some of the Gen2 tames are a little OP too, such as they maewing's speed when gliding/sliding, or the stryder's gathering capacity. But I'd say they're no more OP than when WC introduced other creatures on other new maps, like the wyvern on SE or velonosaur on Ex. They're powerful compared to older creatures from other maps, but don't strike me as OP in the context of the map where they appear.
In theory, if you put all of your items in storage, shut down the game, remove the config to block the tek armour from appearing in your inventory, then start up the game and kill/respawn your character a few times, you should be able to get them then. As far as I'm aware, at least.
