So the baby coming out higher than the parents is not surprising. It probably just inherited the better stats from each of them - perhaps the mother's HP and the father's melee, for example, which caused it's max level to rise higher.
If it has the stats you want, then it will be fine to use as a breeder yes. Just so long as it doesn't have any mutations, which can be checked in the ancestry page when looking at it's inventory screen.
If you are looking for health, does it have the health of the parent with the highest health. When you get the baby with the stats you want, then breed it to the opposite sex parent. If you are planning on going for mutations, I would strongly recommend watching some youtube about mutations.
