If you don't have the cat, a hatchet is your best bet.
Then hunt dinos wich yield more hide then others.
For example phiomeas and parasaurs.
( use spears, have at least 3+, be fast and aim for the head)
On scorched earth it s easier to boomerang stuff,
also jerboas give a lot hide.
Another nice trick - allways watch out for wounded dinos they are easier to take down.
Green beacons often contain hide too.
Prly a bit offtopic but mantis can even wear hatchets ^^
Saddle is just for moving around faster or manually controlling it. Personally, I just use a pack of 5-6 levelled raptors and go ham on everything up to alpha raptors. I stay away from Therizino as well, unless I have a rifle.
A dangerous but useful trick is to get a beefy tame you have a saddle for, like a trike, have the raptors follow it, and set them on aggressive. They'll happily run around attacking everything that moves and gathering meat/hide in the process. This is also a good trick to use for, say, dilos around the base to keep random spawns away.
Actually, the saber was given an extra boost in hide gathering several updates ago (perhaps around the time it got a new model, I forget exactly), so it's a good deal better than the wolf for hide now.
