First up, I'd recommend getting a stacking mod. That will make it easier to carry the large amount of materials needed to build large bases, and also assists with food spoilage timers in feeding troughs etc. I'd recommend this one below, but feel free to look around for any others which might suit you better:

I'd suggest a TamingSpeedMultiplier somewhere between 6 and 9. That speeds up the taming to prevent it being crazy long, but doesn't make it so fast that you can perfect-tame everything with mutton - you still have to craft kibble to get the best tames. I also have my HarvestAmountMultiplier on 7 to reduce the grinding of materials, and I dislike having very long nights so I've set my NightTimeSpeedScale to 2 and my DayTimeSpeedScale to 0.5.
CropGrowthSpeedMultiplier=2 will speed up the growth of crops a little, and LayEggIntervalMultiplier=0.3 will help prevent egg gathering becoming a chore. Also if you want to do some dino breeding, these settings will reduce the timers to a more playable level while still managing to get 100% imprint on all but the smallest, fastest growing dinos:

And lastly I'd recommend looking into the mods StructuresPlus or AutomatedArk. Both of those have features in them which automate some repetitive tasks such as collecting fertilizer from dung beetles and crops from crop plots, leaving you to just focus on the more fun elements of taming and building.
