They are super frail, so try to avoid having them fight anything that can fight back. They also lose oxygen underwater, so try not to let them chase a fish for too long or they'll start to drown.
The pearls will be in the otter's inventory. You won't get any pearls yourself, as the resources come from the otter harvesting the body.
Yep! Bear in mind that it is a chance for pearls though, not guaranteed.
it even shows me when it gets a pearl, it brings some black ones too!

And you want the taming group to obviously not make all tamed dino's in the area attack the fish :)
Once you've selected a group, nothing outside of that group will listen to your "all" commands.
