You got nothing to worry about
The point of it is to streamline things, so that A) You dont 'gotta catch um all' and B) Dont find out the map you are on doesnt have X dino to make that 1 type of kibble you were after to tame a certain dino.
The egg sizes are already in the game and functioning - I have specific sized eggs needed for crafting a few things and it works fine. You can see the breakdown on the wiki https://ark.gamepedia.com/Dinosaur_Eggs
Extra small eggs = Basic kibble
Small eggs = Simple kibble
Medium eggs = Regular kibble
Large eggs = Superior kibble
Extra large eggs = Exceptional kibble
Special eggs = Extraordinary kibble

I liked the idea of the tiers, but when I realised you could use higher tiers to tame anything below it, it meant that we have gone from needing 40 Dino types (roughly), down to not 6 (1 for each tier), but pretty much just 1 type really!
For example, get yourself some Rexs and make exceptional kibble, which lets you tame nearly every KO Dino in the game and some passives! Or some bad leveled Yutys for extraordinary and GG.
Luckily for us this is a sandbox so the reasons to collect every dino in the game is as infinite as your imagination or lack thereof.
