I always aim for some set stats:
400 Oxygen
400 Weight
250 Speed
30 Fortitude
Those are the minimums I go for in those stats. After that I usually go for some extra weight, perhaps some more speed, and maybe some stamina and health if the level cap on the server allows it.
I go for that weight because I tend to be the builder among my friends, and lugging building materials and construction pieces around can be cumbersome. Also I always find the extra weight handy even if I'm not building - transferring items between dinos, bringing plenty of supplies on a long trek, etc.
Oxygen - Scuba gear is so high level and you need water resources before you unlock it, so unless your tribe is big enough to have dedicated underwater farmers, it's handy to have some oxygen. And I go for such a high stat because at 400 you can out-swim everything save for plessies, mosas and squids...even mantas can't keep up with you.
Fortitude is invaluable...if gives a bit of torpor resistance, but it's most useful feature is resistance to temperature extremes. With 30 fort you can often go into the snow biome without any armor at all, and still survive unless a cold snap comes along. And it reduces the times you have to put on warmer armor, or take armor off, because you're freezing/boiling.
And I like a bit of speed, but not too much. Too much will have you tearing around your base overshooting crafting stations and missing opening dino inventories because you can't control yourself.
Gameplay-wise, I like to build up a nice base with strong walls, and turtle somewhat. I let the dinos do the fighting for me, which is why I don't bother levelling health or melee unless I have points spare after other priorities. If ever I do fight myself, it's usually from a high cliff where I can't be hit, or from the back of a dino which can tank hits for me, both with a nice powerful ranged weapon which doesn't depend on melee for it's damage count.
I start with Weight first and raise it to 200 as I level. (Should be 200 by Level 11)
Stamina to 200 so I can sprint farther.
Health to 200.
Melee to 150.
Weight from 200 to 300.
Remaining points into health.
Eventually you get to a point where Health Stamina and Weight are the only stats that matter since you will be using Xbow/Guns or mounted dinos.
Also I delete my save game and start over every few months. Gamers have a tendency to forget what the early game is like once they hit late/end game.
