And here's a link to the spawn entries you can edit. You'd probably want the jerboas to spawn in the forests or grasslands, or perhaps the beaches:

You don't have to overwrite anything - there is that option, but you can add them to the spawner instead, so they will spawn alongside the other things that the spawner normally produces. So we still get arthro, spiders, bats and scorps in our caves too, just that mantis are also there.
Just make sure you balance the percentage so as to prevent over/underspawn.
