Add the potential for mate-boosting into the mix and they can be pretty hardy beasts to encounter.
They do have counters though. One big one is that they're susceptible to bolas, so carry some of those with you if you're going into territory where they wander around. You can split up their pairs or groups that way, and if all else fails you can redirect their attention onto prey-types.

Do people remember the outcry about Rexes dying to TRIKES, of all animals, after the dino nerf a year ago? This is just another case of that happening. People not using knockback on their animal and yelling OP :|
The Daeodons are quite weak in the wild. They die to Mammoths very often when I walk through the landscape, looking for a high-level one.

If he tames Level 11 and lower beats i hardly doubt he can build a saddle for the Rex.
So one of the Pig might managed to get under the Rex and we'll know if you don't command the Rex to move away he is screwed.
Anyway calling pigs around Level 5 OP is rather ridiculous :-)
take in mind as well, anything without saddles take more damage, dire wolves take much more damage than compared to animals without saddles, so this could be another reason.
Dont forget electric and generators also. Sure we need to have them fused under load!
The Daeodon has a high attack rate and it can heal. It's able to attack three times in the time it takes most creatures to attack once. They also have a reasonable pool of health, even at Level 5, plus they can heal - and heal each other. Your barely-out-of-diapers Rex was probably barely doing enough damage to counter the healing factor of 3 Daeodons.
The wolves, despite being my favourite mammal in the game, are probably the most vulnerable combat mount when it comes to Hellpigs as they don't enjoy the added protection of saddle armour. You really need something with more kick than a 3, 6 and 7 Direwolf. I doubt you'd have won against even one Daeodon with that lot.
I agree that the Daeodon is indeed a fairly dangerous mount - I lost a 168 Anky to a pack of 8 Hellpigs. I also got DC'd mid fight, but figured I'd be okay because it's a 168 Anky that had over 500% melee. When I logged back on, my Anky was dead. Went out with one of my Rexes to retrieve my stuff, turns out that of those 8 pigs, 5 were over Level 100, one was a 150 and the other three were 30, 75 and 90. Not even my Rex with over 60k HP and nearly 1000% melee was able to walk out of there unscathed against 8 of the buggers. 8 pigs attacking 2-3 times in the sapce of 1 Rex bite, plus their healing factor, and I should have brought one of my other Rexes as an escort for such a large group. I survived - thanks mostly to my server's player and tamed dino damage settings (low population server so the damage modifier is increased, mainly to compensate in boss fights). I don't think the group spawned as 8 pigs, I think they were 2 groups that spawned close together and in effect merged, but still something to be wary of.
Overall, while the Daeodon is powerful, it's not overpowered. You chose to tame inferior examples of dinos (likely due to how quick they tame - and I don't blame you if you're playing on an Official or 1x server) however if you're expecting a Level 11 Rex to beat a pack of 3 low level pigs just because it's a Rex, you can see now just how foolish an idea that was. A decent (100+) wolf, or even better a Saber - because they benefit from armour, can take out Hellpigs up to, and in excess of, its level provided it is spec'd correctly. A 100+ Rex will also take out decent sized groups 3-5 of high level pigs. Just focus on HP and melee when training it.
