There is a spreadsheet with exact scaling, but it's a work in progress. It has all uninfused weapons, all raw ones, all mundane ones and a lot of magic ones. The exact scaling values can be used with the wiki's attack power calculator to see when and by how much one outscales the other. The benefit when doing this is that you can calculate damage for stats that you currently don't have and optimise the build around the scaling.
I agree with Panic, though, lightning will most likely be best if you have enough faith. Why? The dex scaling in this game is really, really bad, so any phys. dmg weapon that doesn't scale purely with strength will have terrible scaling overall when uninfused.
Your Blue Knight's Halberd, for example, actually scales better with strength than dex, despite having a B dex scaling and a C strength scaling. (47,8 % strength attack power, 42,8 % dex attack power)
Magic/fire/lightning/dark scale really well, however, and your power in those areas tend to be higher than your physical powers if you level faith and/or int.
