How to best deal with Heide Knights?
Especially the ones with the spears?

easiest way is to use a long range weapon (e.g. spear/halberd) - 2Hand it - see them stagger - back off - hit them again when they come in - stagger them again

Apart from the obvious bow/crossbow or spell, any weapon with long range should do, like a spear or an ultra greatsword. Even a rapier or any other thrusting sword. Just take it slow and don't try to be greedy, or else they will use their badly telegraphed attacks and catch you off guard.

Longsword -- 2-handed mode, stab, stab, stab, back off, walk backwards until stamina regenerates, stab, stab, repeat until dead.

Almost every enemy in this game can be kited into attacking and killed by a 2 attack/retreat strategy. Only the DLC enemies (dark spirits) and the reconfigured NPC phantoms (white, black, and shades) will adapt to this method.

2 handing a claymore break their poise which makes them easy to kill.

The spear wielding ones are imo the easiest to deal with, as their spammy attack leaves them wide open for a backstab. (the sword wielding ones don't let down their guard as often/long)

Backstab. All heide knights have at least one combo that leaves their backs exposed for a while. Be careful though, the longsword version does a backswipe attack some of the times.

I always just parry them. Their charging move is super easy to parry. Then just hit them while they are getting up. You might want to cheese the spear one with range, he will do lots of damage if you fail to parry.

Since they don't have shields, I just circle to the right of them and usually all of their attacks miss and they are left open for easy hits or even backstabs. Parrying the knights with swords isn't hard, but it's a lot riskier so I don't bother.

especialy since the spear one often does a combo that ends with a jump. leaves his back very open.
on the other hand the sword one sometimes have that instant slash, haven't been able to pary that one.

You can get used to parrying the sword ones. ♥♥♥♥ the spear ones though, they're ♥♥♥♥♥.

I've played the game some more and 'levelled up myself'. Can deal with the sword-wielding Heide Knights reasonably OK now. The ones with spears still ♥♥♥♥ me up good and proper though!

I've just spent ages against my new mortal enemy - The Pursuer. God that bastard is tough! Found out the right strategy is to play offensive rather than defensive with my build.

On a side note, the co-op is extremely helpful. I wouldn't be able to progress without it in certain areas. Praise the sun.
