That worked great!
Started a New game, took your advice, then backtracked and found the rancor, so maybe I was doing something wrong before (or maybe it was due to being a new game?). It's interesting playing the game in reverse (backtracking and starting from scratch).
Haven't gone back to the start yet, so my rapid transit/"return to home base" option is disabled, but it hasn't been a problem (just made me less reckless).
Maybe I'll eventually go back to my first game, and try to find that elusive rancor (without the cheats), and finish that game as well.
As a noob to this game (and the Star Wars series in general), I can see why so many people consider this the best Star Wars game. The story is really good. Once you get used to the turn-based combat system, as the story unfolds, you realize how good the game is. The graphics aren't too bad for an old game either.
