Also, why should the sizes matter in a game where humans are fighting dinosaurs? Wouldn't you notice this first?
Their inclusion is down to the mechanics of having a largely up close melee-focused group (dinosaurs) pitted against a ranged group (humans). The spitters provide the only long distance counter to the human side. Since most people know dinos from Jurassic Park, the dilo was an obvious choice for the spitter class on Primal 1, and the Cryo's aesthetic similarities meant it became the spitter subclass. Gameplay first, art second, realism never.
Also, its a game. They do whatever the devs need them too.
