I am using mods to remove many annoying stuff in the game, like the outlines on you, on enemies, grey combat visuals, skip intro and so much more ..

Using the horse is a mistake. It's not practical for removing the fog of war due to the terrain obstacles.
The cinematic viewpoints reveal all of the key locations. Running to those locations will reveal the minor stuff.
You don't need a horse in this game. I've used Naoe to remove the fog of war on five provinces. Currently working on my sixth. She runs like Usain Bolt. She can jump and climb. Horses can't do that.
She's the most efficient explorer in the game. 135 hours and nearly six provinces complete. Never called my horse once.
Only Wakasa, Tamba, and Harima remain.
to answer the OP no fog removal mod exists yet that i can find, theres not many mods for the game yet even trainers have limited options, valhalla has a fog remover mod so this game will probably have one too given time
