I would say it differs by the role in dev teams - judging just from playing Ubi games (and watching ACS gameplay as I have not purchased that one) the people taking care of the 'walking simulator' part of the player experience, i.e. world (landscape/architecture) design, engine, visuals etc. still maintain very good quality. The problems start to appear in both design and implementation of game mechanics - stealth, combat etc. And what has been going steadily down the hill since at least Odyssey is writing - character building, dialogues and even whole plot lines/archs.
Thus I hope the talented devs creating wonderful worlds remain in the gaming business no matter if in Ubi or elsewhere and as for the Ubi writers - I wish tham no harm I just hope they will work on something I have no interest in.
I keep flirting with the idea of getting Outlaws since I’m a big fan of Star Wars and stealth games. I heard that much of the bloat and grind have been stripped out but when Ubisoft updated the game to make stealth optional i raised an eyebrow be in ly experience, games with optional stealth tend not be be very good stealth games.
For example there factories that are intended to be liberated by your character and you can do it either guns blazing killing everything in open combat or you could go in sneakily and dispose of everyone without any of the bad guys even noticing you are there. Managed to do some of them that way.
And AC Syndicate was actually the first one that had actual true stealth mechanics in the series.

I might try it for a couple of hrs under the Steam refund safely net the next time the game goes on sale.
That one has coop as well, doesn’t it? I do like a good coop game.🙂
Exactly. So many good and talented people working at Ubisoft caught up in events beyond their control.
You want growth in the market, not just appealing to teenage basement dwellers.
