Personally I'm indifferent to the race of anyone who appears in a movie or game unless it literally breaks the genre or premise of the movie in half but those movies are very thin on the ground. Sure, its probably harder to remake a blaxsploitation movie if the entire cast is from Utah, but it would be novel.
Also, doesn't matter if Yasuke was a real, living, breathing Samurai or not, he's not an accurate representation of feudal Japan.

Every single AC game that's ever existed has had a disclaimer to the effect of 'yeah, its just a setting, we're making it up'. You probably recoiled in horror because the disclaimer talks about how the game was made by 'a group of people of diverse faiths and beliefs'.
