Can someone describe how the Ubisoft Connect integration works?
A week or so before launch there were news articles saying the Steam version would not require the Ubisoft Connect launcher, but that your Ubisoft and Steam accounts would have to be linked. I already linked mine ages ago.

So when I eventually get the game, will it ever ask me to sign in, or will it effectively already know that I have linked my accounts and will never bother me with it?

Honestly this is one of the major factors in purchasing the game or not because I am exhausted by logins and launchers in single player games especially.

It didn't ask me a thing, though I've had that installed for at least a decade thanks to...Ubisoft being Ubisoft.

It was already logged into my account and I didn't need to do a single thing at all. It had the Uplay splash screen for a second and that was literally it. I just tested it on my deck and it did make me log in once, but...like on my PC you see the UPlay splash screen and that's it.

If your Uplay account is already logged in you wont need to do anything at all.
I installed a few different Ubisoft games through Steam on my Steam Deck the past few weeks and in most I had to login the first time I started the game, including AC Shadows. It's a bother for sure but at least it's not the complete Ubisoft Connect launcher, just a "lite" version that does nothing but connect your Ubisoft account and start the game. But yeah, it is weird that you have to do that despite the accounts being linked. Hopefully that will change at some point in the future, I never have to login with other game accounts linked to Steam, so Ubisoft requiring it is an issue on their end and not a limitation of Steam.
