What's the difference between the original and remaster?
It might just be me, but I remember them being more agressive and using the jump attack more often.
They're not though, but that sweet, sweet decapitation did ruin my no-save run 3 times in the past.
In RE3 they are faster and more agile, but also weaker and have much smaller chance to decap you.
In Rev1 they are a joke cause the game is nearly a direct port of the original Nintendo DS version, where control limitations are a major factor. This sadly means that yes, they are that very same joke, but go play the original DS Rev1, suddenly they aren't such a joke anymore.
The hit kill was pretty annoying or the gamma type in RE3 that would swallow you whole as an instant kill move.
Try to make sure your health isn't in the yellow or lower if I remember right that usually makes them use the decapitation move more often.
As far as I remember mine was in the ~fine status but still got swiped.
Besides what ReeNoIp already said they were more aggressive. They didn't waste any time when they going for an attack. But the very nasty thing about was the problem, that cant hit them while they've been in the air. (The only weapons I've found who could do that were the M249 and the Mac10)
Additional to that, the damage you could take in RE1 (especially as Jill) was very low. Two hunters could really ruin your day....even without any jumping attack.

Just beat the game with chris 2 days ago with the amazing time of wait for it... 8 hours and 35 minutes.
Speedran it straight after and managed sub 3 hours!
if you can easily/reasonably fight your way through stuff the scary part goes away.
remember playing the original and you constantly had to think about where you went because actual fighting was hard (lack of ammo and slow controls, bad aim, and a lot less gameplay experience irl).
it made it feel scary instead of action packet and you would move slower through area's because it would mean something. which is something most horror games completely and utterly miss these days. the atmosphere was awesome.
looking forward to playing through it again in a remastered version and hope they didnt fck up the atmosphere and feel ^^

Of note, the people replying are talking about the original Resident evil, not the original version of the REmake, of which the remaster has few gameplay differences.
Also note that only the original American version lacked auto-aim, and in addition it boosted the health of most enemies.
In most other versions of the original resident evil, you did have auto-aim by default and hunters were one shot be the magnum, and most grenade rounds. Dangerous, but not nearly so as they were for Americans.
Oh, and as for you being one-shot at fine; fine status does not mean 100% health. The threshold for hunter insta-kill is right above the threshhold for fine status I believe. Chris has higher total health, which makes it more likely to fall in that little range, since the insta-kill is based on total health.
