For me it's gotta be the Biomes! mods, Chromatic Oasis is fun and I enjoy it, but Biomes! Islands is genuinely a contender for my favourite mod period, it's sooooooo unique and awesome! You get a bunch of new map types, new animals, new plants and tropical crops, it's really fun to make a Polynesian or "Tiki" themed colony where you build out of wood and log walls and survive using the wild plants of your island. There'es several types of varying difficulty but I usually go tropical, Atolls are a cool one too though although much harder for me.
I'm doing a run like this at the moment and I'm currently having "Easter Island Syndrome", my colony is starting to collapse from resource shortages because I chopped down all the trees, and the local animals are attacking my pawns because i hunted all the small prey and they can't live on my heavily built up island anymore. I personally think that's a really fun challenge to deal with that I usually just get on Islands but it can be avoided if you're careful.

I also recommend these mods, this might be a bit rude posting them all and not giving anyone else a chance but I wanted to complete my post:
Winter Taiga and Redwood Forest both add a single biome, and they're really nice although I'm not the biggest fan of the white ground texture in the former. Winter Taiga also has some ReGrowth compatibility if I remember rightly.
Greater Swamps is a smaller one, it adds some new biomes that are more extreme swamps with more marsh. Could be fun if that's your preferred game style.
ReGrowth is a large collection of mods, most of which add biomes. I haven't tried them all but the ones I have tried are really cool and some are very unique. I mainly run the extinct animals mod in my games though, I only bring in the others if I plan to colonise a biome.
More Vanilla BIomes is by far my favourite in this list though, it doesn't add new textures or animals but it adds a bunch of new vanilla-friendly biomes using vanilla assets and they're really great, I've done runs in a good few of them and they fit the game perfectly, Alpine Meadows are probably my favourite with the coastal ones being a close second. I usually run this mod in every run, it just adds a lot to the game even on the world map with some transitional biomes and some unique biomes to break up the monotony, but it also doesn't add many files so it should keep loading down.
