Anyway to remove overhead mountain?

I wanna make sorta hidden village in a mountain but finding a circleish area completely surrounded by mountains is hard

Not without using dev mode or mods. Turning on dev mode there's a remove roof tool that will remove overhead mountains, there are also a wide variety of mods that will allow you to remove them through gameplay mechanics, like digging them out or exploding them.

This mod can generate a map probably exactly like you are thinking of though:

nope. the only way to remove mountain roofs is to mine out all the supports and let it collapse

This won't remove overhead mountain. Once you clear the rocks away the ceiling will still be overhead mountain.

Your only options are to use dev mode or to use a mod.

Something like this will allow you to remove overhead mountain tiles.
