How to harvest only fully grown trees
Wandered back to the game and researched to refresh my memory of how to do this, and google showed a lot more people wondering how to do this than sources where someone discussed how to do it.

In case people are still looking for how to do this, in windows version of the game at least, search through your directories to here:

C:\Program Files (x86)\Steam\steamapps\common\RimWorld\Data\Core\Defs\ThingDefs_Plants

In that folder find Plants_Bases.xml and right click it, select edit.

Control-f to find "harvestMinGrowth" and change that number to .99 or 1.00 or whatever you want it to be (Rarely there seems to be a conflict with 1.00, but I've never had trouble with .99).

That will allow you to use chop wood to select only trees that are 99% or 100% of full growth, and you can still use cut plants to get rid of less developed trees that are in your way.

Sadly I haven't seen a way to harvest only 100% grown wild plants.

Allow tool mod will also handle this.

You don't need mods or edits to the base game files. Just place a grow zone and disallow sowing. Anything that can be harvested within that zone that reaches 100% grown will be automatically harvested. You can delete the zone later or just leave it so things in the zone will be continuously harvested without the need to assign any extra orders. Works on trees, berries, healroot, ambrosia sprouts, etc.

Useful to know! I've definitely done that with Ambrosia sprouts (and a dedicated shelf in my freezer for critical-priority Ambrosia storage), but wasn't sure if it worked on trees. :-)
