I dont replace when I don't have to. Don't have to smooth them right away, I leave that for the quiet moments when my builders have nothing better to do.
I also smooth compared to building, if the ground or walls are already mountain structures.
I like the extra points of beauty compared to regular stone or walls, however, the reality is that you can boost up the beauty of many rooms just by using art, so in the end, it doesn't quite matter between smooth or constructed walls and floors.
Smooth floors are boring IMO, I sometimes smooth early on for builder exp but replace them with real floors later so I can add some variety/design to the base. Walls I never smooth, it's easier to build real walls during construction and replacing them later is a headache at large room sizes (11+) due to cave-in concerns.
I mean, ya. Cutting chunks into blocks and building walls/floors out of them is indeed faster than smoothing, even with all the steps, as AIP pointed out. Smoothing is extremely slow.
You have to move the chunks anyway, and the best/fastest way to get them out of the way is to cut them. So you will have the stone blocks regardless.
You must have a mod that have multiple floor designs because the vanilla one has only two different set of designs, in various material types. May I know which one?
Or are there some stuff I am missing?
There's two types of stone floor, for each stone color, a bunch of different colors of carpet, metal tiles, concrete, and wood, and when I said "variety/design" I mean using more than one type of floor in a room to actually give it some character. A simple example would be like one color of carpet around the edge of the room and another color in the center, or mixing stone/wood and carpet to make it look like you have rugs in your rooms. There's a lot you can do even without modded floors.
Taking the idea to the extreme is a base like this:

That's mostly just carpet and RimFeller synthelene tiles.

This is the one I use. I like it because it feels very vanilla-like. Just a few extra designs, nothing super complicated. There are several other good ones though.
Nice. When I am on a new map, I check which type of rocks are available, then based on that, I decide which one will become a wall, floors for bed room, floors for other areas and such. Kinda "dedicated" floor system. I kept using wood for my recreation room tho.
