Then one of three things happen: The shot gets deflected and you get 0 damage, the shot does half damage (as blunt), the shot does full damage.
Your pawn's head has like 8hp (I think) and a bolt rifle does around 18 damage.
TL:DR The in game explanation is better than my summary and can be found by looking at your gear.
Whenever a bullet strikes an armor part, it makes a 1-100 roll and depending on the result affects how much damage the bullet does, with armor making a smaller window for effective damage.
With a plasteel advanced helmet, the enemy problably got the equivalent of a D&D style crit, bypassing the armor for lethal damage.

This logic is painful.
this game is not realistic, in many factors. obviously im salty that i lost an extremely effective colonist to something that should have been prevented, and ive never actually had a colonist die from anything but instant kills which happen a bit too much in my opinion. fully geared nine shooting guy vs a raider with a 15% chance to hit braining my guy with a plasteel advanced helmet. in fact, the most dangerous colonist ive ever had was in a seperate game and he had 2 shooting skill and a machine pistol. he killed like 5 people from heart or brain shots, including geared people. not once did he down people, just instant death.

If one of your colonists get hit in the head, which is a vital bodypart and has a limited amount of health, youre unlucky.
A high-dmg gun will kill that pawn, even with 50% dmg reduction.
Death is something you'll have to deal with in Rimworld.
