Using any above-ground obstacles such a furniture, rocks, sandbags, etc does give them cover.
The worst solution (but still functional) is a zigzagging wall labyrinth. This gives them complete cover, but does delay their arrival by a good bit, especially if you force them into a narrow single file passage.
There is a mod that allows to change soil in-game: https://steamcommunity.com/sharedfiles/filedetails/?id=1540857850
I also use a "Barbed wire" mod that makes a better alternative to stones and chairs with their 10% cover effectiveness. Makes sense: https://steamcommunity.com/sharedfiles/filedetails/?id=1677669693
I feel your pain:-)
