Its crystal is found in A Dying World, in a treasure cube in an alcove in the upper half of the Dead Sands.

and not, better is Silver Chocobo if you want to race, It is obtained by throwing Mog (with the "Improved Moogle Throw" Fragment Skill turned on) at the Bhunivelze's hologram image in the Academy headquarters in Academia -4XX AF- and can also be dropped by Valfodr Lv.15

Golden Chocobo has a slight chance of losing certain races, especially in the fal'Cie category. Silver on the other hand can only lose if you forget to boost at the end of the race. And in the first three categories even that isn't necessary.
On the other hand many people like to use the silver in battle, although there are monsters who are almost as good enough for that role. I'd say race with the silver, it's actually quite easy to train properly.

I'm going to test something I read, that may be true, might find out today if I can win, if you want to have your cake and eat it too. I know for sure that Valfodr from the DLC Coliseum can drop a Silver Chocobo monster crystal to replace yours if you infuse it, but I read if you don't get the Silver Chocobo with Improved Moogle Throw, do get one with Valfodr, and then go back and get the one with Improved Moogle Throw, you'll have two of them at the same time. So you can spec one for battle and one for racing. That's what I intend to do, and will be happy if true.
