There are 3 ways to Gestalt him: chaining, curing the wonded and inflicting netative statuses on him.
Ironically, I find that chaining is the slowest way. What I always did was set Fang as a Sen. and Vanille as a Sab., they I just keep using Poison and Imperil on him. When needed, I changed into a Med. + Sen. paradigm to heal both of us (which also boosts his Gestalt bar), then got back to Sab.
I also tried chaining him with Com. + Rav. for a bit. It helps, but I felt that his Gestalt bar raised slowly this way.
Or go full SAB. Fang is the second best SAB in the game (and probably the best after Stage 8 is developed), so using her in that role can be advantageous.
To start, this fights difficulty is ENTIRELY dependent on how leveled you are. If you charge through the Archylte Steppe as I initially did it is much harder if not impossible. I had 2 black belts lvl 1 for physical damage and bangles on both, a gold and a Tungston I was waiting to level most of my equipment until I could farm gill later in this chapter, so most of my stuff was fairly low which is again what many of the strategies suggest.
Second, Fang in SAB is basically useless for this fight. I had her fairly high but after the first initial bout of debuffs she just stops and stands there. I am not sure if this is pre-programmed or if she just stops casting because her buffs are already in place, either way I started as SAB/SAB for the first 2 rounds of spells to get a quick burst of bar, then switched to SAB/SEN to take his first combo. Perhaps if you had her at higher levels there is something she might recast, but I did not spend much time grinding and only did like 3 cie'th quests.
Now, after the first pass of attacks you are typically at about a quarter of the bar as he just stands there after casting death. From here is where it gets tricky (unless you are Overleveled). He will often end his combos in quake which does quite a bit of damage to Vanille, so I found myself manually casting a set of cure instead of the Cura that she kept trying to for sheer point values. I would begin casting on fang as he attacks to get a few more seconds of time shaved off.
The strategy I used was to use a full 2 bars of SAB/COM then switch immediately to MED/SEN to charge up for his next bout. After he finishes I top off hp and then switch back as fast as possible. Try to skip as few chances to attack as you can, you really don't have a lot of time so you have to play pretty aggressive.
Lastly I held my renew ability until the final push, where I used it to tank through the damage and beat him with only a few seconds to spare.
Honestly I feel grinding would just be easier. I had to use Fang's summon to get past the robots on the bridge because they were too strong for me. After losing horribly I spent about an hour and a half just grinding the single robot, the 2 rust slimes, and the 3 robots right before this. They give you about 7500 experience which is about a full level for where I was at at this point.
I feel the biggest problem is that the crystarium jumps from about 700cp per level to 2000cp and then 6000cp in the span of less then 10 levels. This causes quite a jump as well because hp boosts go from about 20 per level to 100, meaning that being just a few levels behind can result in MASSIVE under leveling for this particular fight. The enemies before this were only giving about 800cp, and once you got to the cave it was 3000cp, so it was a rather poorly distributed area that resulted in considerable challenges for players that were just messing around as they moved forwards. If you ran past any enemies you will likely just die.
Hope this might help anyone that goes back to play a great game. It can be tedious, but it is still one of my favorites.
As for which paradigms you should use, have at least Med-Sen for healing purposes, and keep switching between Sab-Sab and Rav-Sab every 2 turns to increase the chain guage. If Fang knows any Ravager abilities, Rav-Rav will help a lot, but the fight is perfectly doable even without Fang being a Ravager.
Serafie(the guy above my comment) strategy is what you should go for

That's right, no Ravager at all. SAB/COM exists for the sole purpose of letting Fang run up to Hecatoncheir--away from Vanille--at the start of each Looming Wrath. Once she's up in Hecatoncheir's face, lock her in place with SEN and let her absorb the brunt of the attack. Her role is to free up Vanille to cast as many SAB skills as possible and try to minimize time spent in MED. Good equipment choices include physical resistance for Fang, magic/earth resistance for both, +HP bangles, and possibly a Doctor's Code for Vanille if you're willing to use Potions to supplement healing. Also, Renew is a strong burst heal that can save you from a sticky situation.
If you have an Aegisol that you're willing to use, having some Vanille RAV becomes more viable; otherwise her SAB tends to build gestalt faster than her RAV does. Note that Vanille's extra ATB segment is the first node in her stage 8 MED role and it's helpful though not necessary to grab that before this fight. Note that the default paradigm deck has the three paradigms recommended, just not with duplicates for easy ATB refreshing. It's possible to pull off this strategy without modifying the paradigm deck at all, but it's a little trickier.
