Can I come back and do the side missions later?
I got to the part where you can do the side missions from the C'ieth Stones, but I'd rather just continue with the story and come back later if I need to grind CP or maybe after I beat the game. Can I do that, or do I have to complete the side quests in this chapter before moving on?

Yeah, no worries. every mission is repetitive and so are CP and GIL

And what he also means to say is that after you beat the final boss, you will get a save where you can re-explore the last three chapters, including Pulse, to finish all side-missions and whatnot. You can also kill the end boss as many times as you want after that.

It's actually kind of recommended for you to go complete the game first and then come back. Some of the side missions are very difficult and can really only be beaten through grinding and all of that stuff. The final boss is kind of annoying to fight, sure, but is also really easy (annoying =/= hard), so I believe that you could get more CP off of that than just about anything else (unless the final boss doesn't give CP; it's been a while since I played the game).

Although I think it would be fair to say to be prepared to be disappointed with the side-quest bosses as they're very repetitive and uncreative in just about every aspect of the term. With the world(s) that Square-Enix gave us over the course of three games, they sure as heck didn't put that many memorable boss fights in any of them.

I don't agree. The missions are clearly designed to have the first 14-17 done when you arrive on Gran Pulse. Missions 18-20 will pull you along the story path and 21-26 are part of the story regardless. Missions past that are mostly intended to be done later, but the early set of missions is best done right away.
