How's the bartering system work?
I remember the tutorial mentioning something about bartering during a dialogue tree, but I don't remember what. How does it work? Only an option during dialogue for a contract? A button press?

Seems contract only. And useless.

You'd be lucky to barter an extra 5 gold. That's it. Better off looting a single enemy weapon and selling for 60 gold.

Another wasted feature.

While it is pretty useless overall, you can sometimes get a fair amount of extra. As someone mentioned elsewhere, try asking for much more on contracts being "funded" by those of a more finacially strong status (an army, rich noble, business, etc). The small peasant contracts and "we pooled our paychecks" contracts are less prone to giving out more.

this. one time i took on a contract from a very wealthy man. his clothes, his stature and the way he talked and bragged about being filthy rich all screamed that he was loaded. so i put the contract bar up to maximum and he said "that seems fair for the job"...i got the max out of a monster contract for the first time ever!

It's random. Every time you barter, you get different max overall, and max of what you can get.
There's a contract on a missing husband on Skellige. On my 1st playthourgh I was able to get only +1 coin from barter. On 2nd playthourgh it was about +40.
Basically, this randomiser is crazy. And yes, only before you accept the contract, there's this option.

so does anybody know what happens when the annoyance bar is high or reaches max??

i have a feeling that the annoyance level will actually effect the max level of coin he is willing to give for the next barter....that actually makes sense if it worked like that...

Maybe it depends on your axii skill, or diff level, but I've at the very least got +10 and on average get between +20-60.

Totally, Definitely This ^^

If you are taking the guys dowry for his daughter, or the people are dirt poor, you will be lucky to get 25 to 30% of the slider if you are realllllly lucky. If the contract giver has orens, florens and crowns shooting outta every orifice, then you will probably get 70 to 100% of the slider.

Just 'read' the situation....
