How Does Stealing Work?
I don't get it?

I went into a peasant's house and stole right from underneath their noses. I thought I'd be able to do the same at a guard outpost, but they killed me immediately.

What are the rules for stealing stuff?

If they can see you, they'll attack (and usually kill) you. If they can't see you, then you're good. :-)

i dunno, you just have to accept it, don't steal near the guards.
if you keep asking questions like that you'll start wondering why geralt has to do everything in the game, because the guards are always more powerful and they could take care of everything easily

If they can see you, they'll attack (and usually kill) you. If they can't see you, then you're good. :-)

Maybe that's what happened.

Because I was pretty sure I stole something from a gaurd outpost eariler and nothing happened.

Uh... this is an RPG. Stealing stuff is what you do.

You CAN steal right in front of them, IF your body is blocking their line of sight, as in your back is to the guard and they cant see your hands, but it is very tricky. Wait till dark, fewer guards...

Better yet just take everything you find in houses, they never mind... Plenty of goodies there, never go broke...

It is one of the very silly aspects of the game. You can go into a house and steal everything even if people are in their beds. But God forbid you take a broken rake in the street of Novigrad.

Well it's not like peasants would ever dare to stop a witcher from doing what he pleases. You can even kill their chickens and no one puts up a fight (hello Skyrim). Guards on the other hand...

Edit: But yes, it is very silly indeed, no doubt about that.

Don't steal in front of guards. If what you're about to take is going to set them off, there will be a warning. You can't accidentally steal and alert the guards, there is always a warning. Soldiers often look like guards, but they aren't and don't care. Just keep an eye out for the warning.

Anyone else in game, even inside of peoples homes with them watching you, fair game.

Are you trolling? It was stated if you kill too much cows(exploit) the game punishes you by sending an infinite number of high level fiend monsters. One by one but soon as you kill the first a second arrives and so on and so on.

Looting is one way of making coin, killing animals is another. I wouldn't kill cows exclusively, since the patch you speak of, but hides are still very valuable.
