You think you've defeated me but you are wrong.
I can't be killed, I will be back
Thats what he says, its elder speech.
Please note I had to use a synonym for a few words and three are unknown to me they are marked with a x (primitive, defeated, wrong)
You are primitive.
You think you've defeated me but you are wrong.
I can't be killed, I will be back

The official wiki page disagrees with you. Plus you say he is a demon, we have no idea what his true origins are he is a mystery.
Some more stuff pulled from the wiki.
Randall Flagg - character from novels writed by Stephen King has lot of names one of them is Walter o'Dim. Gaunter O'Dimm also shares simmilarities with Leland Gaunt from "Needful Things" - an evil entity who grants human wishes in exchange for evil deeds.
◾ Pact with Olgierd is a reference to Mr Twardowski, a story taken from polish folklore.
◾ Gaunter O'Dimm is an acronym for G.O.D. Odd coincidence, given his evil role. When Geralt has to face O'Dimm's challenge, the dimension he's teleported to can be seen as a depiction of Hell.
◾ By stopping time at will, summoning a storm and stealing souls without showing any sign of effort or focus to do so, one can assume he is the most powerful character ever to appear in The Witcher series.
◾ Master Mirror is a clear reference to (if not personally) the Devil, who takes pleasure in mortals that fall in tempation, those being his contracts.
◾ Both times O'Dimm unfreezes time and consequently disappears out of thin air, a person immediately mentions the word "devil" in a sentence, it both time he also have wooden spoon.
You are welcome to believe that but that wikia page is relativly young compared to the years old russian and polish fanbase sites regarding the witcher.
The english wiki has a small elderspeech section and even that does not match any words of Gaunter.

CDPR have been asked directly now so lets see what they say. In regards to the language its a fantasy universe, it wouldn't be the first time an unknown dialect arises if they so choose. Im hoping they give an answer because its bugging the hell out of me.
