I finished the game and made a new load, and when I was doing the tutorial Gerald tear a bag of a doll and has a blue eye character, that bother me much, because I do not know who is this person who was inside the bag, someone you know give me an idea who?

I am very, very late to the party here so I apologize. I believe the person in the training dummy is Cahir, from the books. He was from Vicovaro and was the knight in the black winged helmet that Ciri had nightmares of. In the books she very similarly knocks the Nilfgaardian helmet off of his head, and he has dark blue eyes like the individual in the dummy. Cahir befriended Geralt and died protecting Ciri, so it seems quite plausible that he is the answer that you sought.

The person who trained Ciri in swordfighting was the witcher Coen. He died prophesied by Ciri.
