The way to trade is to never expect to sell something at above the system average price, or at the next place you dock. Look to buy high-value stuff, since it's usually available in small quantities and won't take too much of your hold even if you can't sell it for a while. Generally, don't buy unless the price on the chart is 40% or more along the way from the system average to the bottom. Then, sell at anything from a little below system average to as high as you can find. For very high value items in small quantities, you can afford to wait quite a while until you find a very good price.
And don't forget to hail every trader you meet and sell them stuff. They always pay above system average. To ensure they make you an offer on your most expensive stuff, drop everything else into space before doing the trade, then pick it back up.
And if you want to be an ♥♥♥♥♥♥♥, tell the trader you're robbing them as soon as you complete the trade. Regardless of whether they just surrender or you have to destroy them, you get the items you sold back, along with whatever else the trader was carrying. This is very useful if you want to make peace with the Red Devils, since you're locked to hostile with them if you're friendly with the Citizens, and robbing traders this way lowers your Citizen rep.
And of course, pay attention to events. They're the most predictable factor affecting prices.
On the map, they indicate a special event on that station. Hover over it to see which event it is. There's a guide somewhere explaining how the different events affect prices.
In the commodities, they indicate goods affected by an event. They don't tell you whether the event increased or decreased the price though. Still, it's usually obvious.
