What defines the unit pricing?
because the same units seem to be going up.

first i paid little for a missionairy even, now i pay 350ish for a single one and 650 for an apostle.

what causes the prices to go up so much?

I don't have an exact answer, but my Civ-sense says the Era you're in along with the number of that unit you've purchased.

It is the number of units you purchased.

Just buy a Missionary, and look next turn, it's more expensive
Look the same turn, even. The price increase isn't tied to the turn, it is tied to the purchase.

Most units go up about 10 gold / faith each time you buy one.
