Don't think there is an option to have your own "server", other than the fact that one of the players is technically hosting the game.
Hopefully someone who has actually played multiplayer can jump in here and give you some first hand info!
Mods, you need to search the library of mods to find what suits your game. Everyone should have the mod.
Also it's best if everyone has the same content.
You set a timer for how long each turn is. Usually quicker at the beginning. slower later in the game, as there are more units and descions to be made.
There is a mode if you want to play with someone on the same computer called "hotseat". In that mode you each take your turn, one after the other. This slows the game down for sure, but still enjoyable to a point.

You can pick in the settings.
Civ 6 has a wikia that answers most general questions such as the last two, or you can read the guide ingame which also has the same answers. But, there is pretty much just the base game to play. You can do teams if it's your fancy. Same as single player, but with other people.
