As far as how young he looks in MGS:
1. If MGS ever got that full on remake Kojima speculated on, his agedness would've been one of the first corrections.
2. It's a japanese game. The only characters who ever actually look at all old are the ones who are implied to have lived for an extremely long time. Remember Solidus? I think he was supposed to be in his 60s. (as part of his cover. I Realize his agedness is actually part of the imperfect cloning process) Apart from his hair, he looks like a stressed 40.
As for Ocelot, his first appearence being an oldster was made far before the backstory would go on to be made.
A lot of these explanations make more sense, though.
But all his questions are answered in the mission 51 video though.

Such as the fact that Solid Snake had to fight Big Boss twice, which was now explained to not have been Big Boss the first time but actually Venom Snake
