Best class to start?

Paladin or Knight, although to be honest, after the first few hours it doesn't really matter. Class only affects your starting equipment (which will be replaced pretty quickly) and what skills you start with/where you begin on the skill tree.

If you really feel like it, you can get to any other class's starting point in about 5-10 levels, which isn't much considering you're likely to hit level 80+ in a normal playthrough, and there are items scattered throughout the game that let you 'refund' skills you don't want anymore.

Consider looking into a weapon type and choosing that way. After messing around with a few classes I went with mage. I usually always play caster classes for most games so I looked up some weapons on the wiki and noticed greatswords with magic scaling so I went that route along with heavy armor and magic on the staff side. I just got my weapons upgraded to Northern Cross greatsword with S/S strength/magic scaling and Saira's Staff with S magic scaling. It's nice to know what weapons you'll be using end game so you know what to build around and that way you can learn how things work for the weapon type and magic you decide on along the way too.

No need for blocking since parrying is pretty easy to learn in this game and for sure know how to roll well thanks to DS3

Because of the sheer amusement I get from chucking potatoes and bashing, smashing, and thrashing foes with a pot; Chef. Plus starts at lvl 1 and has more malleability starting in the center of the skill tree.

Beyond that, paladin, yeah, mace is strong, regen ring, and armor. I prefer the thief because of dagger, speed, and even mildly useful throwing items.

I'll agree in that it's best to find a style or weapon you like and roll with it; they're all a blast.

The best class to start with is the Peasant with the Grabbing Ring. You get a solid combo of weapons, a shield, you start at the dead center of the Skill Tree, and you level 10% faster due to the ring. If you beat the first boss, you can start at level 12-13.

Second best class is a tossup between the paladin and the mage.

Well, sharing is caring and since this game runs off the same logic in regards to crossplayer communication as Dark Souls (Soapstone markers vs. Jurney Bottles), I thought this would've been appropriate.

This tip was my first bit of advice for this game, many months ago. I thought it best to pass it along.

Nice. I tried all the classes for beating the first boss, and I found the peasant to be the best option for me. That pitchfork (along with most spears?) gets 2 hits in on a strong attack, so that was pretty helpful.

I started off the game as a paladin, ran into trouble, played some with a friend using a new (mage) character, and then started off as a cleric just to try all classes... and that's the character I beat the game with in the end. I entered Devara's Light, got the skills needed to use the Warhammer (accessible pretty early on), and then balanced prayers and physical attack pretty well... and it made me more or less unstoppable :P

Devara's Light's healing items are awesome, they also buff your defense for a few seconds when used, and since they heal over time this means you can drink them right before getting hit by an attack to reduce damage AND get your HP back... and since many bosses have long delays between their attacks, this is likely to get your HP up to max before the next attack. The healing prayers also cure the Wounding you get from all these hits you tank instead of dodging, the holy weapon buff prayer goes really well along with a weapon with as much raw power as the Warhammer, and there's even some attack prayers for enemies outside of your melee range.

So TLDR: start as Cleric, enter Devara's Light, then work towards using hammers and greathammers.

Just start as pauper, rlly. It has pretty cool weapons, comparing to chef, and doesnt lock skillpoints on something, you, probably, wont like/need later (comparing to everyone else).
Then go wherever you want - there are items, refund skillpoints (not all, just selected one per item) on use, so - if you will find your build bad, you always can switch to another one.

In my opinion, best build here is prayers + poleaxe.
As prayer: on early game - you will be able to heal uself. But, later, you also will get access to buffs, makes you able to fight completely armorless (e.g be faster). And not only that, but also ones of best non-binded to weps (e.g - unlike most of usefull magic, you will be able to use them without requirment to wear staff/wand) damaging/combo-breaking skills.
As poleaxe fighter, you will get access to three types of weps - poleaxes, skythes and spears. All of them are completely badass - you will be able to do combos (unlike 'press X to win' with greatswords), your attacks will be fast enough (only katanas and knifes are faster), and your damage will be pretty solid. Basically - you will be able to be combo-breaker and prevent most of enemies (ever bosses) from doing their attacks.

Unless you want to challenge yourself, STAY AWAY FROM THE MAGE AND HUNTERS.

Mages have some the hardest routes to get a decent second weapon (The spells do make up for it, but you'll have to wait until the Wandering Woods without having to look for hidden walls.)

Hunters have a weird way of their trees and they have a hard time getting to some of the best CC weapons (GUNS)!!!!

Paladin or Pauper is nice to start and if you favor speed, Thief is good as well since they are close to the center of the tree.

Cleric.
Has paper for the unspeakable deep.
Has mace for sodden knight.
Can pick up sacred linens and stop using the bandage ring without dropping four useless stat points or four grey pearls.
Finally, everyone needs more endurance, so the light armour pick is meaningless.
