I never even bothered with Undersight once. I'd just put my shield up when I saw their whisp of purple smoke, wait until one struck, and then poke it once and it died. Easy peasy.
*shudders*
Just hold up your shield when you go to the few areas where you know they are, and as soon as one strikes, keep holding up your shield and poke it from behind the shield with your strong attack button. If your weapon is strong enough, it will only take one hit to kill each one, and there are never more than three (I think a couple areas only have two). If you haven't yet learned which areas they're in, try to spot the whisps of purple and black smoke they give off.
You could also always use the potion that lets you see them, but I never once used it, so it's not necessary if your weapon, shield, and defense is good enough.
Those things made me quit the game... I wonder if I'm ready to try again...
Those dudes are huge ♥♥♥♥♥! However, the trick is to lure one at a time. If you have a weapon powerful enough, it should only take two hits. Use a jumping strong attack to slash down on the walking narwal twice and you should be good. Just don't get hit!
Also, don't quit the game because of them. They're literally only in that single area. I think there's three of them and then you'll never see them again, so you don't even really have to deal with them unless you want the (admittedly pretty good) treasure they protect above those shifting and disappearing platforms.
Don't give up! You're so close to the end of the game!
EDIT: just checked. They only have 100 health and their defence is zero to every type of non-weapon damage (e.g. fire, poison, lightning, holy, and arcane). Still, I found my strategy to work very well.
EDIT 2: try to use a powerful transmuted boss weapon, like the Black Widow or Iron Cross. Those both deal regular damage, and magic damage and lightining damage, respectively. Make sure it's a transmuted boss weapon like those and not something like the Sodden Knight's sword (I believe it's called the "Shrouded Bulwark"), which just deals high regular damage. And take those weapons to a blacksmith and upgrade them to the highest level for the most damage possible (level VII).
