I killed it with my fists, because I started a magic-only run. Took about three dozen tries, but I managed it.
Suggestion: get a cleric and use blessed page you have to fight him. Go w/o armor so you have high roll speed (which is fundamental for beating him). His attacks are easy to predict cause the animation time is quite long. Roll on the opposite time and hit him 2/3 times depending on the type of the attack he just did. Repeat till dead and you will start the game levels ahead.
By the way the Unspeakable Deep face reminds more of a giant octopus or, more appropriately, Cthulhu
Everyone else already gave great advice, and to add more to it definitely don't rush the fight, especially if it's you're first time trying to defeat him. Take your time and dont' get too greedy as usually that is what screws you in the end. Once you defeat him once you'll defeat him on every future playthrough!
