I've got something around ~300h in GTAO, and that's pretty much all solo. I've done a few random missions, and I've done a few random heists, but a huge chunk of my playtime has been purely solo.
The new Cayo Perico heist is nice because it's the first one that can be done solo; I'm honestly surprised Rockstar would go there. You do need 2.2m to buy the sub that lets you do the heist, though.
Beyond that, there are a lot of businesses which you can buy, and there's quite a lot that you can do solo.
One thing that bears noting is that a lot of the things you can do with a business forces you to play in a public lobby, which opens you up to griefing (pretty sure that's the whole point, as frustrated players are more likely to buy shark cards).
You can circumvent this by playing in a "solo public" lobby. There are multiple ways you can do this:

Suspending the game from resource monitor is the simplest, but you have to do it every time someone shows up in your lobby. Blocking ports in your firewall is more permanent, but requires more fiddling if you do decide you want to play with others (you can whitelist friends' IP, for example).
A lot of random contact missions require two or more players, but there's still quite a few that can be done solo.
Unfortunately, accessing them is quite unintuitive, and definitely not immersive.
Press ESC, and from there go to Online->Jobs->Play Job->Rockstar Created->Mission.
There you'll find a bunch of missions you can play (and replay) solo. If/when you have a list of certain missions you like doing a lot, you can create a playlist and chain them together.
For what it's worth, contact missions should only be done "for the fun of it", for the most part. If you're grinding for money, there are more efficient ways (unless you're just starting out, in which case you don't have much choice).
Feel free to add me, I can offer better experience than playing with randoms.
But the latest heist dlc can be done solo from a to z. So GTAO is now also online soloplayer by game design.
Like mentioned above try some contact missions solo. Take your time. Most of them can be done solo.
Cheaters are "white bears" who stopping you to make $$$ on legit way.

See: when it all began we had freeroam where you couldn't really do much and to get some work done you'd call one of your main contacts (so: Simeon, Gerald, Martin, Ron or Lester) and ask for work. Then you'd do that mission and/or continue doing other missions. There was a small story around the mission, you knew who you were working for, done.
Of course, as you noticed yourself, there's hardly any teamplay. Especially not amongst randoms.
Then we got heists (the original heists). Ironically enough the original heists provided way more storyline and GTA lore than any of the current ones. I mean... we got to know Paige, we learned about Agent 14, we discovered how un-organized Trevor could be.. stuff like that.
Still, you could start most of this all from your phone. Use your phone to hop into a heist and go to your heist room to start one for yourself. IMO it makes sense and is still immersive: using your phone to get a lead for work.
Also... don't underestimate those contacts because everything that happened in the city (freeroam) was tied into one of those contacts. Gang attacks? Martin Madrazo was behind those, he asked / ordered you to take care of the uprise in those areas. Survivals? The original survivals were introduced by Ron who asked you to help TPI by protecting their properties from invaders.
And then we got more and more DLC and the storyline somewhat faded out. But.. in a way it makes sense I think because the focus is now slowly shifting from those contacts towards yourself. In storyline you're also becoming a big player in Los Santos, maybe even bigger than the others....
Think about it... You maintain a bunker for gunrunning shipments (now you're competing with Trevor a bit), your vehicle warehouse is used to steal and sell vehicles (Simeon would be very jealous for sure! In fact, I'm surprised he never tries to sabotage us), instead of relying on Ron to set up trades based on the hangar you're now cutting out the middle man and run your own warehouses across the city (special cargo). All from the comfort of your own CEO office I might add ;)
And of course you're also going to get busy with cocaine, meth, counterfeit cash, weed and forged documents, and you set up a biker gang to utilize it all. Basically you're now threading on the turf of the Lost (though that's an assumption on my part).
Next stop the Facility and the Arcade. The storyline gets muzzled here because although you "buy" a Facility it becomes quite clear from the getgo that you're not in full control. At best you "hired" a part of the Facility to do with as you please but it's still a government building which is also in active use by that same government (just listen to the intercome if you don't believe me). Of course the Facility is the key for the doomsday heist, an interesting story for sure but it has little ties into the happenings of Los Santos. At best it's the appearance of agent 14, but that's about it.
And then the Casino happened. A place to gamble, get more stuff, do some work and you could own your own penthouse. Fun for sure but not super special (IMO anyway). Though I do enjoy the new missions which actually have an interesting story behind it. Surely you've noticed that the casino is right next to the Lost clubhouse? I'm sure there won't be any tensions there :P Yah, try calling Ms. Baker for some freeroam missions, that might change your impression on that ;)
And then we got the Arcade which actually brings us back to our roots: there's a new casino in town, cool, let's rob it!
I'm more or less purposely ignoring the Arena wars and the arena wars workshop because this doesn't really tie into any kind of storyline. In fact, it's also pretty useless all things considered and I doubt anyone actually uses this (I only have a workshop for the cool custom lights and the fun RC Bandito). I'm sure to find out because I'm probably going to buy my first arena wars vehicle now that I have some cash to spare ;)
Finally, last December, we learned about El Rubio and his island. Cool, a new island: let's rob it!
The main problem for you (at least I think so) is because you were thrown into the open. So you can never learn or unravel the story anymore because you never lived the releases of the individual DLC's. For you it's just one huge pile of activities and yes, then there's a problem because R* never bothered with any continuous storyline.
Most of the individual DLC's never have ties into other ones, they don't really reference each other.
It depends what you refer to with live activities.
My suggestion would be to start playing in an invite only session. Learn the map, follow the story a bit. Try calling one of those names I mentioned earlier and instead of inviting others do those missions on your own. Nearly all contact missions can be done solo (though some can be very hard).
Earn some cash, rob some stores, and gain 50k. Then use your interaction menu and become a VIP. Now you'll unlock more freeroam activities, use your interaction menu for those.
That could be a good start.
To get the full experience you should look into public solo mode. I should re-do my guide about that and I think I will. Public solo allows you to experience the full extend of online yet without others to bother you. It's IMO quite enjoyable.
