Anyways, the way I always recommend is doing the first phase in stealth by hiding behind a pillar and shooting the eye on the tentacle with the regular pistol, then the human torso that pops up on top when it's stunned (preferably in the head) with a harpoon.
Those are your only two stealth weapons. Using anything else or getting spotted will alert it to your presence. It will take several times doing this before it goes agro, the number of which depends on difficulty mode and upgrades.
Lay down a shock bolt trap between it and you before it goes agro if you can make one from scrap or save one by using stealth. As soon as it goes agro, go into weapon wheel to slow time and switch to explosive bolts (crafted prior), then run into the hallway and lay two on the floor near the red barrels. One near them, and one before it in middle of hallway.
Go back into weapon wheel and craft 2 more explo bolts, run to end of hallway, turn right, and do same near other red barrels past the car. Now shoot it in it's open mouth with your most powerful weapon. It can take only a few flurries of explo bolts to take it out, but if you have no bolts or even scrap at the start, you'll have to use grenades or the sniper rifle from a distance.
Sounds like you may have already tried using the shotgun, which requires closer range and skill at evading. If you still struggle and have no scrap or bolts even at start of the fight, I would consider going back to a part of the game where you had some and try to conserve them or scavenge more scrap.
If he charges you with his purple mouth and you don't wan't to stand your ground and shoot him then sprinting straight left or right will dodge the charge.
