Once that's installed in your game directory, open the control panel and go to the Input Management section, under Enable/Disable Devices, select "Disable Keyboard Always".
There's one point in the game where a keyboard is required (name selection), but that aside, this will fix your problem with no negatives.
The way I worked around it was by playing in Borderless mode and using the Windows Key while in it to bring up my taskbar/start bar and mouse so I could then click the program I wanted to alt tab to, that somehow superceded the game recognising I had pressed a keyboard command and stopped it from ever swapping the UI to mouse and keyboard stuff.
No idea if that'll work for this game as I played the demo on PS5 but just leaving it here as a possible solution hoping it helps!
