After redoing it, I had maybe 75% health left and still couldn’t believe that I couldn’t shoot down that damn plane lol. I even thought about shooting the wings, but that didn’t work, obviously.
I feel so stupid, but at the same time, I can’t help but feel like that’s just bad game design, and another example why QTEs are terrible.

Why bad game design? With this game you have to figure things out more than most and if you are playing it on hard then you are going to have to figure things out even more. You are lucky to get a prompt at all playing on Hard.
It's not QTE. You get plenty of time. You just have to pay attention. The game is about discovery just as much as action so you should always be looking around. If you did that then you will have noticed the plane next to you and the prompt appearing.
