Since Update 2 it's not running on my RTX 3050 TI anymore due to low VRAM
I know my specs are below official min requirements (only have 4 GB VRAM) but I tried and it worked fine for 12hrs of playing. Then this stupid update has been installed and since then it's not even starting anymore giving a VRAM error message. Can I turn back the update? Or is there a way to modify the graphic configuration in a config file?

well if you do find a fix please let me know, had the same issue but only happened when I updated the NVIDIA drivers, now I can't play it and before I was able to.

You need to upgrade your graphics card

yeah well that we know thanks...but the game was running before and it was playable (at least in mine), so that's not what OP is asking...

No, it's running just fine on my 3050 and I'm using the latest drivers.

Edit: Or well, perhaps.. I do have 12Gb vram so perhaps that has something to do with it.

Wasn't aware of a 12GB version of the 3050 but you're more than fine with that amount.

I have 6 so I am aware I am below the minimum requirements, but I have been playing other new launches with no major issues whatsoever (and I could launch/play the game before updating). Guess the RT is killing it.

My bad, it's a 3060.

Yeah it's more than enough, the bottleneck here really is the VRAM unfortunately.

Couldn't find a solution OP, just forked out 10 bucks for GeForce NOW to play the game, not worth the hassle plus I get to play it with better graphics. Would probably recommend if you also have a GPU bottleneck.
