Dungeon Level?
Each dungeon has a number next to it, if I beat Ruins a few times it increases. What does this mean exactly? What happens if I always skip the Boss and just keep doing other Quests in the same Dungeon?

I think the number next to the dungeon represents the possible level available to que for that dungeon.

You can skip Bosses and do them later, its a desicion that I often opt for if I think the available adventurer's cant handle the dungeon and sometimes I opt to pass it when I think the loot is bad. Thing is that the Bosses must be defeated to actually progress the Story (at least it was in Beta not sure now).

The number is to know how many bosses you have unlocked.
Bosses are not required to finish the darkest dungeon though usually they are easier than regular dungeons and they give better rewards + champion bosses give additional trophy trinkets, some of which are really decent.

If I skip the first Ruins Boss, Necromancer Apprentice for a while, and increase the dungeon to like level 5, does the boss increase in power, or what happenes?

Nope, you actually have to kill bosses to progress their appearence.
Prophet won't appear without killing necromancer and veteran necromancer won't appear without killing lvl 1 prophet (1st 1 I'm sure about, 2nd one is my deduction).

I you play runs in any dungeon, the dungeon itself levels up. at Lvl 0 a dungeon only offers short easy runs, at lvl 1 you'll see short and medium easy runs, lvl 2 you'll get the first boss runs

You're correct. To see veteran bosses in a particular dungeon it's necessary to kill all apprentice bosses for that dungeon.

Not how it works. My current game has a level 0 Warrens, with one Veteran quest in it. All others show three quests, regardless of level. The difficulty of the runs depends on the level of the heroes in your roster.

Actually I think it just opens up new options over time. When you are around lvl 2 with some of your guys you get vet ones, 4-5 weeks later when you can be around 4 you get champion dungs.
Long options add up later too and then it's all random.

My roster is getting to lvl 3. Does this mean that then I will not be able to go after apprentice bosses?

Bosses mission won't progress until you beat em. Normal apprentice dungeons will still be there (though someitmes RNG may give you less or sometimes even 0 missions). Ofc if you got 25 characters at 3+ you will have to dismiss/kill someone.

Not without leveling a new group. Lvl 3 heroes refuse to go into apprentice (green) dungeon runs. I ran into this snag my first estate as well. Pita.

I wish there was a way to reject the XP gained so you could keep a hero at lvl 2. And just pimp him out, heh.

Anyway if I can't get rid of all the apprentice bosses I'll just increase my 15 roster.

Roster is pretty much the 1st thing that should be maxed.
