Im surprised your PC only has 8 GB of system RAM. Most nowadays have at least 16 or 32. Your PC meets all of the other minimums?
Minimum requirements should always be taken with a grain of salt; with updates and mods they are often too underpowered to run the game properly at all.
Circumstances may vary but OP did state that the error messages that pop up after crashing are memory related, and the game is indeed very memory hungry - with most expansion packs and 6k assets, it runs at 50 GB memory for me.
Rough memory requirements as follows:
4GB RAM: Base game
8GB RAM: Base game + 100 assets, 1-2 DLC's
16GB RAM: Base game + 500 assets, 5-10 DLC's
32GB RAM: Base game + 2000 assets, 15 DLC's
64GB RAM: Base game + 4000 assets, All DLC's

it isn't "an issue" for some of you because you just lucky Windows didn't act stupid & actually grant you the pagefile the game needed automatically. (and you didn't experience the much better performance & loading time by having adequate RAM, can't see the problem when you don't have perspective on both sides)

But in most cases, Windows IS acting stupid, not granting the space required, and that's why you crash caused by running of of memory. And we recommend to either upgrade your RAM or manage pagefile manually to adequate amount.
