because when i have no mods my game loads finee, and when i do have mods then my game wont even show me the menu
That can happen. Almost any error can happen if there's a version incompatibility between a mod and the base game.
It won't help you now, but the best course of action is to never allow a modded game you're currently playing to update. Only update between playthroughs, not while you're in a playthrough.
An easy way to do that in 7DTD is to copy-paste the whole game to a different directory. That will give you a fully functional 2nd installation of the game, which Steam will not update. Put mods on the 2nd installation, run the exe from the 2nd installation and you're good to go. The 1st installation will update. The 2nd installation, the one you're currently playing with mods on, will not. So you'll never encounter the issue of the base game updating in a way that your mods aren't compatible with.
But that won't help you now.
You could try reverting your installation of 7DTD to the previous version and disabling updates. You can do that in the Steam client because TFP decided to allow it. That might allow you to continue your current playthrough with your current save. Maybe.
