If the game still won't start, verify your game files. If that doesn't help, I guess you should come back here for more advice.
I've removed Vortex, deleted all the mods I have installed, and even tried deleting the entire game folder and verifying, but for whatever reason every time I've tried to verify my game files, it always fails to validate a single file and I don't know what that file is.
C:\Users\"your name"\AppData\Roaming\7DaysToDie
& then delete game folder:
...\Steam\steamapps\common\7 Days To Die
& so, do a check file of 7DTD via Steam.
I tried this and it still didn't work. After deleting and doing a file check, it tells me all files are validated and when I launch the game, it crashes. I validate again and it tells me "1 files failed to validate" but I don't know what this file is. It's always "1 files failed to validate".

but the INF line following says it's using just

and later it says

probably because folder doesn't exist.
Spaces in the option is a problem, try wrapping the whole option in double quotes like this
"-UserDataFolder=C:\Users\Nick's PC\AppData\Roaming\7DaysToDie\Mods"
Delete the folders in which you modified the files and run a file integrity check.
If the map does not open, you can create your own base (POI) in the map editor, place it on the map and start a new game.
This is going to sound stupid, but do you know how to edit that? I'm not too knowledgeable on editing files or commands like that to make things work (which is probably how I accidentally bricked my game).
I'll try to help but I haven't used vortex and don't know what it has done to your system.
You said you didn't want to lose your save, so the first thing I'd do is make a backup of your save. If it is from before you started modding it may be in C:\Users\yourname\AppData\Roaming\7DaysToDie\Saves
Are you still using a link that Vortex created? Or the Steam Play button or the desktop link it created? If it's a vortex link, that's probably the problem. I'd try the Steam link or button.
Are there any Launch Options set on the library page? On your Steam LIbrary page, right click the game, choose properties, and there will be a field for launch options.
If there are no launch options set, something you could try to see if the game is installed correctly is navigate to the game folder F:\SteamLibrary\steamapps\common\7 Days To Die in file manager and then double click 7DaysToDie.exe to run the game with no options.
I am no longer using the Vortext link and it doesn't matter if I use the Steam play button, desktop shortcut, or the .exe directly, the game will start and then immediately crash. I've tried installing and reinstalling onto a different drive as well with that not working either. A backup of my save has been made already, just desperate to get my game back up and running cause I miss playing it.
No launch options are enabled and even running it from the game launcher doesn't work either, I honestly don't know why it isn't working anymore.
I may be repeating things others have said, but I try to be thorough. So bare with me.
1. Via %appdata%, delete C:\Users\me\AppData\Roaming\7DaysToDie - make sure in C:\Users\me\AppData\Roaming, there are no other renditions of 7DTD folders either.
2. Browse Local Files by clicking 7DTD from Steam. Leave File Explorer opened.
3. Uninstall 7DTD from Steam.
4. Go back to step #2 and delete the 7DTD game installation folder. Go back one folder, and check that no remaining versions of 7DTD is in there.
5. Go to C: and in the parent folder, look to see if you can find the following: C:\Program - note, it's not C:\Program Files or C:\Program Files(x86) or C:\ProgramData. It's solely just C:\Program - if you see this, go into it and make sure it's only 7DTD related stuff. If so, delete C:\Program
6. Open up Vortex, and delete/uninstall all of the 7DTD related stuff. Uninstall Vortex afterwards. That program gave me nightmares when I used to play Skyrim all those eons ago.
7. Via the Registry Editor, look for: HKEY_CURRENT_USER\Software\The Fun Pimps\
8. In the left panel, look for the 7 Days to Die key, right click it, and click delete. Delete any other 7DTD key that's there too.
9. Close the editor, restart your computer.
10. Load up Steam, install 7DTD.
11. Add the 7DTD game installation folder to your anti-virus exception.
12. Open up the game launcher from the game install folder, and click on the button for "Reset to default settings" or something, then click "Save & Run". This is likely a redundant step, but might as well do it to 'complete' the steps.
13. Run the game.
