Darkness Falls has some learn-by-doing skills, but otherwise you start as one of 6 classes (you can do all of them eventually, but each gets some stuff earlier than others (EG the Scientist can build a Chem Station as soon as you've the resources, other classes must wait until 3-4 pre-requisites are met)). Lots of other changes (more zombies, more foods, more workstations and item mods). It usually feels slow to start, then it feels like you're strong, then the Demons eat you. I'd say A21 is a bit easier than A20, but if it's all new then it's all a challenge.
I only played Undead Legacy a little, it's not for me, but it's quite popular. It had more workstations and items, a lot more resources (your encumbrance was by item weight, not type, so more resource types isn't a big problem, but mining Iron was a pain since it was several back-forth trips each night), a few more enemies.
The Western one I didn't play, but saw a short video of it, it seemed well done.
Shouldn't be hard to search around for more details and installation instructions for each of them. I'm not sure they're all up to date with A21.
If you're looking for individual mods or a combination of individual mods, that's going to be very subjective. Your best bet for that would be to think about what it is that feels off to you in vanilla and look for mods to change those specific things.
For overhauls, here's a few off the top of my head:
Preppocalypse. A smaller change from vanilla than many over hauls, but well made with a consistent theme. You play the part of a prepper, which makes you better suited to the post apocalypse than the usual random average person of vanilla. But it's a harder post-apocalypse than vanilla. Tougher versions of zombies. For example, some of the party girl zombies have picked up machetes and learned how to use them. They've become stronger from training with a melee weapon and tougher from having a better food supply. There are more zombies with ranged attacks. Some zombies with AoE attacks. You can tell it's going to be harder because it starts you off with a bicycle and some weapons and ammo. In theme - of course a prepper would be prepared. But in overhauls mods starting kit generally indicates a higher level of difficulty. Farming and food is greatly improved and extended. More quests have been added. Still quite like vanilla, but more stuff. It's what I'm playing at the moment.

Joke Mod. It is a joke. Many jokes. All of them bad. But it's also a very good overhaul mod. It's a joke, but it's far from being only a joke. I'd rate it as one of the best overhaul mods. Also, you can ride a unicorn and no other mod offers that. Actually, it's a horse with a large ice cream cone stuck on its head. But hey, unicorn.

The Wasteland. 7DTD Fallout Edition. Very well done. It adds a fair bit of Fallout-themed stuff. With different names for copyright reasons.

Wild West. What if the zombie apocalypse happen in the 1870s rather than the 2030s? Best played on the supplied map, since the gameworld is completely changed. The supplied map has the new (or converted) POIs made for this mod and only those, so every POI is period appropriate. This mod has a much harder later part of the game than vanilla does because the guns are far more limited. The only full auto gun is (a) extremely hard to get and (b) so cumbersome it's completely unfeasible to carry it around. It's a base defence weapon. For general play, for guns you're effectively limited to revolvers, semi-auto rifles with small magazines (10-12) and pump shotguns with a small capacity. Also, you can ride a horse.

War3zUK AIO Very much changed from vanilla. The author says about 90% of all game mechanics have been changed and I think that sounds right. It's also the hardest version of 7DTD that I've played. I think vanilla on insane difficulty is probably easier than War3zUK on default difficulty, the lowest difficulty setting.

Darkness Falls. Very much changed from vanilla. Famously hard. I think War3zUK is a bit harder, but I'm sure some people would put it the other way around. Thinking about it, I think DF is less hard to begin with but becomes harder by the endgame. Maybe. What's certain is that both are far, far harder than vanilla. DF adds a story and an endgame questline to 7DTD. Also, everything is much worse at night. Hiding at night will remain a good idea for longer than in vanilla.

Why do I have eat/drink every 15 seconds? run out of stamina with a small sprint.
That alone makes me rage uninstall every time I try to come back to this.
The nutrient intake is internally consistent and partially externally consistent and that's fine for a game (as opposed to a simulator).
Physical work increases nutrient requirements.
The player character in 7DTD is capable of physical work far beyond what is possible for a human.
Therefore the player character in 7DTD has nutrient requirements far beyond what is humanly possible.
It does scale - if you don't use stamina or health regeneration in 7DTD your character's nutrient requirements will be far less. You're racing through food and drink to regen stamina and health.
The stamina issue reduces greatly as you become stronger and fitter and more skilled.
It's internally consistent. It's partially externally consistent, just scaled further than reality for gameplay purposes. I think it's fine as is.
Single player, always. I don't like having other people in my games and my shift work means I usually play at night so voice comms might be annoying to my neighbours.
wa3rzuk mod: funny mod but playing is no joke, very hard at the beginning, roaming zombies are all ferals no matter day/night, you can find mutated dogs everywhere with letal consequences, but if you manage to survive in a good base, resources drops from sky like no tomorrow and makes the overhaul very easy.
joke mod: careful with their skills when you upgrade, spawning a titan screamer with 10k points of life at the first 2 hours of gameplay is no joke.
wasteland: very funny... if you can survive the beginning and not face a raider with an m-60 and you with a wood club...
Darkness falls: Adds high end content, when you are mighty and want to face a real challenge, brings QoL features and lasts your gameplay longer.
Another no one said, Sorcery: You want to be a mage? then welcome to sorcery, is an overhaul dedicated to magic with their own skills (also vanilla), still work in progress, makes the starting game a breeze.
If want you can mix darkness falls with sorcery, just search for info in sorcery discord, be careful, if want to play in a21 you must search for the a21 compatibility patch.
Another one, age of oblivion: you like to have a farm with lots of crops and animals? just go in, also with some mechanics to farm screamers with the fire mod to burn full wood houses, stick features to cloning things, a lot of cooking recipes and other features, have high end content but check info about it, there are nasty surprises waiting for you like the quest workstation...
