Read through it to see if its what you're after, or even give it 20 minutes of playtime to see if it provides the thrill you seek.
Now, to touch on the things requested, assuming the above mentioned mod is not suitable to your needs.
1. 1 Class of Zombie
CHS provides. However you can also disable zombie running in the in-game settings, also.
2. MUA Zombies
That isn't possible yet. But when A15 hits it should be possible - and I'm sure I will add something similar to CHS. Though you have to also be considerate of the fact that performance will be impacted if things get too "overboard". Or so the devs say.
3. Headshot Only Kills (1 shot)
This part is a loaded question with different bits so I will seperate them.
A. "A fundamental in zombie-lore is that only a headshot will kill and one shot is enough so long as it's a clean shot to the head. Melee can be 1-3 shots, depending on aim/weapon quality."
CHS provides.
B." Body shots have no effect, causing the zombie to merely flinch but not scream in pain."
CHS kinda provides. Body shots still do some damage, just considerably less. If I recall correctly they only do around 40% of the base damage.
C. "Also - can the sound of the zombie be switched off once it's dead?! Moaning zombies with their head blown off make no sense! ;)"
This is something the devs would have to do. Its outside the scope of what is possible in XML files alone, far as I know, which is what modding is built around for this game.
D. "Shotguns and magnum - (at close-ish range) always removes the head or limb when shot..."
CHS provides, sorta. I wouldn't say the limbs but the heads are going to be exploding for sure. Kinda have to given the way mechanic functions, at least in the way its used in CHS.
4. "No zombie animals. Just angry dogs/bears."
CHS provides.
5. "One Bite Kill"
Possible. Not something done in CHS, however.
6. "No 7 day hordes"
Possible. Not something that CHS does, at least not completely. It does increase the spawn rate by a LOT though. Which can be further increased with the in-game spawning setting.
7. "No Zombie loot - turns instantly to gore"
Possible. Not in CHS, though. You'd be missing out on a lot of loot if you did that, y'know. You could lower the loot abundance in the in-game settings if you find it too easy.
8. "More zombies *inside* POI's."
Possible. Far as I know CHS does do this a little bit, but not a great deal. Its a bit more complicated. When A15 hits and they add sleeper zombies I suspect this to no longer be an issue but we'll see.
9. "Drop everything on death"
This is done with the in-games options menu when you're selecting/creating your game.
10. "Leather/Iron armour increases bite defence to 30/70 and 50/50 chance of infection respectively..."
Not currently possible. Should be when they add buffs on armor. But no telling when that will happen.
11."Once hunted, have the zombie NEVER give up until dead or you leave the area far enough to despawn it"
I think this is possible. Not part of CHS.
12. "Spawn area to be widened substantially along with heat-map range so zombies don't spawn over your shoulder"
Not possible.

My mod packs, including CHS, are already compatible and should be come as preset options in the program too to choose from.
Other than that mod packs like mine are usually "installed" by drag-and-dropping the included folders into the appropiate location and overwriting the files. 7DTD is no Skyrim or other such games or have steamworkshop.
